Creamy Avocado Chicken Salad with Sourdough Toast on plate

avocado and turned into one of those lunches I actually look forward to all week. The dressing is creamy without being heavy, no mayo in sight, just avocado, Greek yogurt, garlic, and a squeeze of lemon. It comes together in minutes and it is so, so good. Piled on toasted sourdough with a little heat from jalapeño? Honestly... it hits every time.

TIP: Keep well in the fridge for 2–3 days. Just store the dressing and base separately and combine fresh. Make a big batch on Sunday and lunches are handled. Since there is avocado, you may notice some browning, ensure to squeeze some lemon juice on top before storing!

INGREDIENTS

🥑 THE CREAMY DRESSING

Creamy Avocado Chicken Salad ingredients

1 large ripe Avocado

1 cup Greek yogurt OR plant based yogurt

1 clove Garlic, minced

To taste Salt and Pepper

🐓 THE BASE

2 large Chicken breast, cooked and shredded OR crumbled firm tofu

1/2 medium Red onion, diced

1 small Japlepeno, diced (seeds removed to reduce heat)

2 medium Tomatoes, diced

Optional Cilantro or sliced green onions

🍞 TO SERVE

2 slice sourdough bread, toasted

Optional Extra lemon juice + chilli flakes to finish

  1. Make the dressing: mash the avocado in a bowl until smooth-ish (a few small chunks are perfect). Stir in the Greek yogurt, minced garlic, lemon or lime juice, salt, and pepper. Taste and adjust to your liking, it should be creamy, bright, and just a little garlicky.

  2. Prep the base: shred the cooked chicken breast using two forks or your hands. Dice the red onion, jalapeño, and tomatoes. If using cilantro or green onion, roughly chop.

  3. Combine: add all the base ingredients to the bowl with the avocado dressing. Fold everything together gently until well coated. Taste for seasoning and a little extra lemon and a pinch of chilli flakes goes a long way here.4.
